My OnGoing Muffin Recipe Thread - I hope they are not offensive and don't make Cake my friends feel bad

In keeping with the new site policy, it is my pleasure to present to site members the best and MOST EXCITING Muffin Recipes.

Posted Image Strawberry and Cream Muffins

2 Eggs
1 tsp Vanilla Extract
280 ml (1 pint) single cream
200g Sugar

Preheat the oven to 200°C (gas mk 6, 400°F). Place the eggs, vanilla extract, sugar and cream in a large mixing bowl and beat together until sugar is dissolved. 400g Flour (plain)
3 teaspoons Baking Powder
1/2 teaspoon Salt

In another bowl place the flour, salt and baking powder and mix thoroughly. 200g Fresh Strawberries

Chop the strawberries into small pieces, and stir into the flour. Pour in the liquid, and mix together until just blended. Line a muffin tray with paper muffin cases, and then fill each case to just below the top with the muffin mixture. Bake the muffins for 20-25 minutes. They are cooked when a skewer inserted into one and then removed comes out clean.This recipe makes approximately 12 muffins.

Here is a MC one that I'm bettin a "certain type" will manage to somehow construe as offensive.

Posted Image Chocolate Muffins With White Choc Chips

These muffins taste great with a cup of coffee as a second breakfast late morning. They are chocolatey but the flavour of brown sugar is also quite distinct.

50 g Plain chocolatePreheat the oven to 200°C (gas mk 6, 400°F).
Melt chocolate in the microwave. Use a mixing bowl.2 Eggs
250ml Milk
125ml Vegetable Oil
100g Granulated Sugar
100g Brown Sugar

Add and whisk the eggs into the melted chocolate, then add oil, sugars and milk and mix. 400g Flour (plain)
4 teaspoons Baking Powder
1 teaspoon Salt

In another bowl place the flour, salt and baking powder and mix thoroughly. 150g White Chocolate

Chop the chocolate into small pieces, and stir into the flour. Pour in the liquid, and mix together until just blended. Line a muffin tray with paper muffin cases, and then fill each case to just below the top with the muffin mixture. Bake the muffins for 20-25 minutes. They are cooked when a skewer inserted into one and then removed comes out clean.

This recipe makes approximately 12 muffins.

juice of 1 to 2 lemons

Preheat the oven to 200°C (gas mk 6, 400°F). Place the egg, oil, milk and sugar in a mixing bowl and beat together until sugar has dissolved. Add the lemon rind and lemon juice and mix.2 cups plain flour
3 tsp baking powder
1 tsp saltIn another large bowl, thoroughly mix the flour, baking powder and salt.

Add the liquid mix to the dry, and roughly mix it in - it does not have to be absolutely smooth.Fill a muffin tray with paper muffin cases, and then fill each case approximately two thirds with the muffin mixture. Bake the muffins for 25 minutes.

This recipe will be available in metric measurements soon.

Makes approximately 12 muffins.

Ingredients
  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon


Directions
  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  • Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  • To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  • Bake for 20 to 25 minutes in the preheated oven, or until done.

I like an occasional muffin, here at our local Sams they sell some great ones.
I like the Blueberry of course, but the Banana nut ones are the best in my opinion
They also have the double chocolate ones with chocolate chips :)

For People who cant have sugar like me Posted Image Heres a nice easy Recipe.


Whole Wheat, No Sugar, Yet Very Tasty Blueberry Muffins Recipe


Ingredients 1 1/2cup whole wheat pastry flour1/2tsp salt2tsp baking powder1/4tsp cinnamon2eggs1/4cup vegetable oil3/4cup orange juice1cup blueberries2tbsp flourDirections

  • Heat oven to 400F.
  • In a large bowl mix together the flour, salt, baking powder and cinnamon.
  • In a small bowl, beat the eggs then add the oil and orange juice. Add to flour mixture and mix a few turns. Add blueberries and fold in gently.
  • Fill 12 greased muffin cups with batter. Bake 20-25 mins. Cool in pan a few minutes then remove to a rack to finish cooling.
